Selen is a semi-finished powder for making semifreddo and milk creams, and is best enjoyed at -15°C (5°F). It's also an excellent product for making hot ice cream. Designed to ensure the dessert is ready to cut at serving temperature, Selen's milk proteins and high emulsifying power allow it to incorporate ample air into the semifreddo, helping to ensure a stable structure, even when transporting the dessert from the pastry shop to your home.
