This aluminized iron pizza pan therefore represents a middle ground between blue iron and aluminum pans.

Unlike aluminum pans, with this aluminum pan the cooking of the pizza base will be more colorful and fragrant.

It can be used with both electric and wood-fired ovens, even at very high temperatures.

Thanks to the X-shaped diagonals on the bottom, this aluminized iron pizza pan is particularly suitable for those who, when cooking pizza at high temperatures, want to prevent the pan from bending too much due to thermal expansion during cooking.

This professional pizza pan maintains its characteristics if kept in good condition by following a few simple precautions:

Before using this aluminized iron pizza pan for the first time, it must be placed in a preheated oven at a temperature of 150°C for 30 minutes to eliminate the protective oil present on the pan.

To clean the pan, use a soft cloth dampened with lukewarm tap water or a sponge for washing.

It can be washed with water.

Washing with water and caustic substances and the use of steam are not recommended.

To clean the aluminized iron pizza pan, do not use metal tools or abrasive brushes as the incisions that are created on its surface may lead to permeation and subsequent corrosion.

It can be used in leavening and freezing cells.

Above the oven temperature of 300 - 350° C, the pan may warp due to thermal expansion and then return to flat again once it has cooled out of the oven (this is a completely natural phenomenon due to the presence of folds along the edges and the welds of the pan).

Do not place the empty pan in the oven at a temperature above 200°C (at this temperature the thermal stress deteriorates the construction materials, reducing their lifespan.

After use, the pan must always be kept oiled and stored in a hygienically suitable, clean, dry and dust-free place.
